A touchscreen right in the cold room or prep room: operators in thick gloves work directly on the screen, and the machine’s surface gets washed down constantly. The touch technology is the deciding criterion — pick the wrong one and the machine becomes a display you can only look at.

Starts up below zero. Running at −20°C and STARTING at −20°C are two different things. A running machine generates its own heat; a machine that lost power overnight and gets switched back on in the morning is the real test. The number to look at is the lower bound of the operating range.

Where people get caught out

Things the filter above does NOT catch. Read before you commit.

Condensation is what kills machines in cold storage, not the cold. The machine should run 24/7 so it stays warmer than the surrounding air — powering off overnight and back on in the morning is the recipe for water inside the machine.
LCD screens respond noticeably slower in deep cold: the image smears when scrolling. A variant with a screen heater handles it, but it is a special order — ask our engineers before settling on a screen size.
Spinning hard drives (HDD) are not recommended below 5°C. Cold-storage configurations should use wide-temperature industrial SSDs — that is a meaningful price difference, and not the place to cut.
